hi,
we have a selection of chickens and a few of the cockerals are now ready for the pot, some of them have good capes, all i need to know is how to cure them, any advice would be greatly appreciated

Air drying is good with the help of Borax powder which you can get at the chemists - it's the way I still do the occasional cape or better piece of road kill these days  :wink:
Lots of methods, but this one is simplist/easiest IMHO  :idea:

I have dried them using salt, but Cas, my partner uses the Borax as above.
